Stuffed Bell Peppers…

An easy side dish to start with! Simple and great!

You will need:

  • 2-3 Bell peppers (any color)

  • 2 Potatoes, boiled, peeled and mashed

  • 1 Onion finely chopped

  • 3-4 cloves of garlic

  • 1 inch piece of ginger grated

  • 1 tsp chili powder

  • 1/2 tsp turmeric

  • 3/4 tsp garam masala

  • salt to taste

  • Chopped coriander

To garnish:

  • 1/2 onion, lightly sauted
  • Lemon pieces.

To make:

Wash and deseed the bell pepper cups.

In a pan heat oil and fry crushed garlic and ginger

Add the chopped onions and cook till they are soft.

Add the mashed potatoes and all the spices. It tastes nicer if its on the spicier side. Since the peppers are going to be bland you want the extra taste in the stuffing. Cook for 2 mins after adding the spices

Add chopped coriander and switch off the gas.

Fill the peppers with the stuffing.

Apply a few drops of oil over the peppers and grill it for about 10 mins. Cut them in slices or wedges and serve with lightly sauted onions and some lemon pieces.
