Sweet corn soup…

When cold frigid winds sweep the land people will go to any effort to stay warm, and a hot pot of soup is a delicious, and hearty way to help keep the cold at bay. Nothing warms us as a steaming bowl of soup when cold winter weather frosts our toes and noses.

This spicy version of sweet corn soup is guaranteed to clear your sinuses on a cold winters day. :)

Though its not at all cold over here in Singapore since I am nicely enjoying the warmth (accompanied with humidity) of 28*C this goes to all of you who are residing in the cold regions. :)

To make the soup:

Chop carrot and cabbage finely.

Keep the water to boil (you can also used vegetable stock if you have). Once it begins to boil throw in the carrots and cabbage.

Let it cook for about 2 mins and then add 1 can of cream style sweet corn.

Let it boil. In the mean while make a paste of 2 tsp of cornflour with 1/4 cup of water.

Once the soup comes to a rolling boil add in the cornflour paste, 1/2 tsp soy sauce, 2 chillies finely chopped(this makes it reall spicy, so adjust it as per your taste) , salt to taste.

Let it boil for two mins and then switch off the gas. Add 1 tsp of vinegar and garnish with crushed pepper and cilantro.

There you go….. ready to enjoy the hot, steaming, spicy, sweet corn vegetable soup. Feel free to experiment with your choice of veggies, (beans, mushroom, spring onions) I used only whatever was there in the fridge (on a friday evening :) ).

Corn provides a fibre rich diet which has been shown to lower high cholesterol levels, reduce the risk of colon cancer, and alleviate some of the uncomfortable symptoms of irritable bowel syndrome.

Carrots are an excellent source of antioxidant compounds, and the richest vegetable source of the pro-vitamin A carotenes.

And cabbage increases production of enzymes involved in detoxification, the cleansing process through which our bodies eliminate harmful compounds.

    i love sweet corn soup, and i have it so many times, but i never made it at home, don’t know why ? one friend has provided me recipe for this also, but never tried it.
