Banana Nut Muffin…

When I heard about Nandita’s theme for WBB #7, this muffin came to my mind instantly. I have been longing to make bake this since quite some time, and hence didn’t have any excuses now. I don’t remember the real source of this recipe but it was in my cook book since a long long time (I used to maintain this cookbook long before I got married - having recipes from cookery shows, or friends and yes of course, my moms recipes. :) )

This recipe is actually of a banana bread but I made muffins out of it (they bake faster than the bread :P ). Since it’s just two of us who were gonna eat this, I halved all the ingredients and it made 6 large muffins.

As per the original recipe:
Sieve together 1 1/2 cups of plain flour, 1 tsp baking soda, 1/4 tsp baking powder.

Keep this aside till you mix all the wet ingredients.
Cream together 3/4 cup butter and 1 cup sugar with a hand blender till it becomes light and fluffy.

Add in 2 eggs and few drops of vanilla essence and blend again.

Mash about 21/2 medium sized ripe bananas and add to the mix.

Beat again till all the ingredients blend well.

Add the chopped nuts. I used about 7-8 blanched and chopped almonds. You can use walnuts or even chocolate chips as a variation.

At this stage preheat your oven to about 180*C. Line the muffin tray with paper cups or grease them lightly.

Now gently fold in all the dry ingredients in the wet blend. (Don’t over mix! Baking soda/powder activates on contact with liquid and loses its rising power if over mixed……. did you know this???!!! Till now I would always bake somehting using those ready made mixes, a perfect idiot proof recipe :P !!! …… I got to know about this only when I started baking this muffin. )

Fill individual muffinf cups to about 2/3rds and garnish with almond slivers. Gently press with the back of the spoon so that the almonds sick well to the muffins.

Bake for abut 20-25 mins at 180*C or till the knife inserted comes out clean.

The aroma of the baking muffins fills the whole house. I thought of surprising my husband with the baked muffins and hence quietly working in the kitchen. But the damn smell!!! And for the verdict, they are yummily soft and the crunchy nut in the middle does all the magic. They were a bit on the sweeter side (atleast for me) since the sweetness of the banana also matters and hence next time I am gonna reduce the sugar content.

    I love muffins, but I am a vegetarian who do not eat egg. What would you suggest me to use instead of egg? Can I replace it with milk? if yes how much pls?

    Try using egg replacer. And if you dont find egg replacer, then may be you can slightly increase the amouont of baking soda and baking powder by about 1/4 tsp. Let me know how it was. :)
