Persimmon Spice Cake

Since the time I saw this cake baked by Meeta, it was the one in my next ‘to make’ list. So when the next ‘truckload’ of persimmons came in I made this simply delicious cake.

I am not listing down the steps here since it followed her recipe blindly. The ingredients mentioned in her recipe are in grams, so I used this site (which I also got from her blog) to convert into cups. The only thing which I don’t understand is the difference in colour. Her cake looks rich brown where as mine was not so dark. Any idea why???

One more pic which shows you how the persimon puree has set!!! (Mark the round edges of the bowl)

Along with the pecans and walnuts as mentioned by her, I also added these dried mixed fruits to it.

Instead of a round cake tin, I baked them in my longish bread tin. And since its slightly deeper than the normal cake tin I increased the baking time by about 15 mins.

And finally!!!!! the absolutely yummy delicious cake I have ever eaten baked!!!!!

Rich, moist and dense!!!!! Rich in flavours, moist with the fruit and dense in texture!!!! (I guess all my exclamation marks will tell you how awed I was with it :P )

By the time I mixed everyhting and finally added all the dry ingredients the quantity looked so huge that for once I thought I would have to invite all my neighbours over for tea with this (since we are just two of us in the house). And the aroma of all the spices was so rich, I am sure it would have reached all their houses :P . Next time I will half all the ingredients and bake, the trick which I used over here. In the evening when my hubby dear came home he knew at once that I was busy in the kitchen doing somehting since the aroma was all over the house!!!!!     Coffee! Brilliant. It looks amazing and the idea with the dried fruit is fantastic. I am not sure why there is such a difference in color - I used brown sugar. Did you too? But the most important thing is that it should have tasted good!

    Fantastic step-by-step instructions… me too baked the cake just this morning. Since I only ‘comment’ on blogs I didn’t take a picture:)

    I think the sugar colour made the difference… can see it in the picture of butter+sugar creamed and ready… mine was darker. Also I suppose the foil lining the baking tin might have been another reason. I have seen recipes where a foil is used to prevent excessive browning… so try using a baking/parchment instead next time! Hope that helps…
