Missi Roti, Sarson ka saag, Caramalized apples with Vanilla Ice Cream

God forgive me for this, but I happily facilitated the divorce of the ever popular and the ever green couple - makke di roti and sarson da saag. :twisted:

Since time immemorial the people of punjab have been enjoying the rustic flavour of this beautiful couple and then finish it off with a serving of lassi or fresh curd and white butter.

Now makke has this cousin called as missi. While makke di roti has this natural sweetness of maize, missi di roti brings out a mix of besan and wheat. Both delicious and both compliment sarson equally well. :cool:

While makke gets the liberty of pairing with sarson every now and then, poor missi is left alone. :( So today, I helped facilitate the divorce and coupled missi and sarson together.

Don’t they make a good pair??? :mrgreen:

Missi Roti:

I used a readymade missi flour for this, but you can mix wheat flour and besan in the ratio of 2:1.

To make the dough, you will need:

 

 

  • 1 cup wheat flour
  • 1/2 cup besan
  • 1 big onion finely chopped
  • 2 cloves of garlic - crushed
  • 1 inch ginger - grated
  • 1 green chilli finely chopped
  • 2-3 tbsp curd/yogurt
  • 1-2 tsp oil
  • salt to taste.

Mix all the ingredients and make a soft dough. Cover and let it stand for 1 hour. Roll out slightly thickish chapatis and cook (preferrably on an iron tava) till golden brown blisters form on both the sides applying a bit of ghee or oil.

For the Saag:

Most of the recipe that I came accross while I googled for this used a varied combination of greens for this saag. Some just used plain sarson, some mixed sarson and spinach and a few even added methi in addition to spinach. As for me, I mixed sarson and spinach in a ratio of 2:1 - both frozen. While using frozen greens it is not advisable to thaw them on the table top, just drop them in boiling water with a bit of salt and a pinch of soda bi-carb to let the greens maintain that fresh green colour. Cook for a few mins till they seperate from their frozen state and become soft. Drain and puree finely or coarsely - its your choice.

If using fresh greens then blanch then in the boiling water in a similar way and once they are soft jump them in cold water immediately. And then puree.

Heat oil in a pan and saute:

 

  • 1 big finely chopped onion,
  • 1 tsp ginger chilli paste

Once the onions get soft, add

 

  • the pureed greens,
  • 1 tsp garam masala and
  • salt to taste.

Cook for a few mins and then add 1 tbsp of maize flour. Cook for a few mins more. In a small kadai heat the oil, add 2-3 cloved grated garlic and one kashmiri red chilli (optional) to it. Heat till the garlic gives out its aroma and starts to become light brown in colour. Por this over the saag and serve with hot rotis.

And now, to celebrate for the new couple, is this wonderful dessert of Caramalized Apples with Vanilla Ice Cream

 

 

In a pan, heat

 

  • 2-3 tbsp sugar
  • 1 tbsp butter

Once the sugar melts, throw in the apple slices and mix to coat the caramel evenly on the apples. Cover and cook for a few mins till the apples soften.

Remove them over a dish and top it with a scoop of vanilla ice cream. Pour the left over caramel sauce over the ice cream.

Now take a spoon, sit back and enjoy the gooey, chewy caramel with hot apples and vanilla ice cream and pray for the good will of the couple!!! :D

And hope they live happily ever after……… :)

    Coffee Poor makkee di roti.But I liked your combination of missi and sarson too :) Staying here in Delhi I was lucky enough to get fresh sarson from someones farm. So this last winter we had lots .They used to give me Bathua with sarson. I do not know its English name .
    The icecream looks delicious too.

    Lucky girl!!!!!! Fresh sarson!!!!!!!!! I can only dream of that over here :( Thought I am sure they would be having it in little India but I am just too lazy to go all the way over there :(
    The english name is Mustard leaves.

    Oye!!! Too gooD! I had eaten sarson da saag long ago… I loved it ! Missi roti looks very nice (and round-round! )
    As for the dessert… wish I cud hv some right away! Love it!

    a tip for perfect round rotis: roll a huge chapati, then take any round thing which can work as ur template, put it on the chapati, and make indentations, remove the excess dough from the side. What you get is a perfect round chapati!!!!!!!

    HIHIHIHIHIHI……….. and you all thought I made those perfect round ones!!!!! hhahahaahah
    I am lazy in doing anything wiht rolling, REMEMBER????!!!!!! :D

    I love missi roti…..more than makai di roti. Actually i usually have mu saag with plain parantha instead of makai the roti :grin: they say i am mutant :lol:

    And at last one of the saag recipes that adds atta :) Thanks for including the atta-the saag would never be the same without the atta, it gives the much needed thickness. Lovely saag, Coffee-hugs for this.

    YEAH!!!!! Before the atta it was looking kinda watery. the atta added a good richness to it. Thanks for approving mam. :) I was waiting for your verdict ;)

    I dont know whether my suggestion is practically possible in your place.You can sow sarson seeds ,palak ,dhania seeds in pots.
    When they grow to a height when it is ok to cut them,do not pull them out along with their roots.
    Just pluck the leaf along with some part of stem,keeping roots intact buried in the soil.After another 15 odd days,you will find fresh new leaves.Repeat the plucking leaves process.
    you don’t need to sow new seeds for some time.
    I have a kitchen garden where I have sown palak,dhania last winter.It was still there before I left for holidays.
    I am sure you should get to eat them at least twice.

    For pudina,=when you get pudina from the market remove the leaves only. Let the stems remain as they are.Cut the stem in two pieces insert in the soil(pot),by making a not too deep hole with your finger.Water it as usual.Be patient .After 15 odd days it will stabilze ,new leaves will show again after few more days.you have to be patient .Do the same thing pluck leaves along with a little stem.This will be enough for both of you.
    I think by now you must be secretly wondering whether I am a kheti wali kissan Haaa..aaa.
    But I hope this helps you.

    Oh Coffee I know the name of sarson in english .But do not know the engish name of Bathua which they add along with sarson. Bathua is again a leafy veg with small leaves.

    by the way u have got that perfect round roties…err…how did u manage to get that great looking roties? i must have particiapted in MBP-lets roll… atleast i would have managed to get srilanka looking roties from other country maps;)

    What a combination ! I could have never imagined. I can make missi roti ( I will have to try your version with yogurt ) and as much as I would love to make sarson ka saag ( I can taste it in my mouth while typing this ) we dont even get the frozen sarson here :-(

    Might have to try Archana’s tip and sow some mustard seeds in a pot and see if I can grow some sarson !!

    Oh no.. You can’t seperate them:-( j/k lol I like sarson ka saag with makki Ki roti or in the breakfast with plain parantha but saag has to be on parantha with white butter not on the plate or katori;-) I like to hold in my hand & eat with malai..lol btw you use the right combination 2:1:-)

    Have you tried makki ki roti mein gurd?(jaggery) yum;-)

    I tried your gujju kadi & looovvedddddddd it.. Made it twice but couldn’t take picture.. Thanks for the recipe:-)

    Rooma, How did you manage to get a perfect circle for your roti? Tour version of saag looks super easy and loved the bright green color that you were able to get. Caramelized apples look great too. Never tried them this way. Thanx for sharing all of them.

    There’s this punjabi restaurant here and their speciality is this makki di roti/sarson ka saag(no surprise, of course). But the hitch is they need an hours notice to serve the dish and the place is a good 45 mins away. So imagine the scheduling to be done!

    I tried this today and omg, came out just like what they serve and we just didnt have to move our butts an inch! Thank you thank you and thank you for this wonderful recipe. A keeper at that!
