Mango Madness!!!!


The blogs are blooming with mangoes is all forms and types and tastes!!! This king of tropical fruit is probably the best loved tropical fruit all over the world.

The number of ways you can eat this fruit is abundant! Fresh cut mangoes, ice-creams, milk-shakes, puddings, custards, pastries, souffles, curries, pacchadis, pickles, salad, salsa, ……………….. ENDLESS!!

The full blown, ripe, golden fruit is prized no doubt, but even the unripe green fruit is equally prized. When the summer is at it’s peak my ma would be busy making pickles and storing them for the whole year . The most commonly loved in our house is the mango chunda (grated green mango sweet pickle), gor-keri (sweet mango pickle) and khati keri (sour mango pickle).

For the mango chunda, green mango is grated finely and mixed with sugar and a bit of salt. Now this mixture is kept for a few days under direct sunlight - balcony or terrace, for the sugar to melt and blend with the grated mango. A fine muslin cloth is tied over the vessel before it is kept under direct sunlight to prevent any misconception to the crows that its kept for them to taste and give their verdict for the same!! ;)

The same goes for gor-keri where jaggery is mixed with big chunks of raw mango with a variety of spices and marinated for a couple of day so that they blend in perfectly before they are ready to be licked !!! ;)

Sadly, in Singapore, though its pretty hot and the heat is at its peak especially in the afternoons, showers are absolutely unexpected here!! If I plan to make this here and keep the vessel in the balcony for the sugar to melt by suns heat, it would have become a soup by the time I come back home in the evening!! ;) And with the air full of moisture over here, I can surely expect fungus in them in 2-3 months time.

Endless brands of pickles are available in the market, but home made pickles have a taste of their own. So shall we………………….

Two types of Quick Mango Pickles, my entry for Nupur’s A-Z event!

Chop the raw mango into small squares.

 

 

 

 

 

 

In a small pan heat 2 tbsp oil and brown the jeera. Add the chopped mango pieces and stir.

 

 

 

 

 

 

Add salt, 1 tbsp red chilli powder and 1 tbsp dhania jeera powder and mix well.

 

 

 

 

 

 

Now add about one cup of jaggery and mix well. It will dissolve in a matter of few minutes.

 

 

 

 

 

 

Once it starts to get a boil, switch off the gas and let it cool. Fill in sterilized bottles and store it in the fridge for 2-3 weeks.

And now for the next quick pickle! Though it has mostly the same ingredients it tastes totally different than the first one!!!

Chop the mango into small pieces again. Add salt, red chilli powder and finely chopped jaggery. Now, work up your arm muscles and mix all the ingredients well with your hands, breaking any jaggery pieces if left behind. Very soon it will all melt quickly and become like a syrup. The warmth of you hands helps here!! Keep in fridge and consume it within 4-5 days! :)

Take your favourite muesli, add freshly chopped mango and a huge dollop of your favourite yogurt (plain or flavoured……. mango flavour if you need a huge overdose of mango) Enjoy this wonderfully, blissfully, amazing mix of flavours to begin your morning with! :)

    Hey one doubt, the first pickle….is it sort of sweet’ish ? coz 1 tbsp chili p/w and 1 cup jaggery makes me wonder!

    It’s kinda sweet and sour. You can adjust the amount of jaggery if you prefer more sour! :)

    Oh!!! those green sour mangoes dipped in bright red chilli sauce(pickle) looks so very devine. A bowl of cold curd rice with a lump of this pickle on a hot summer day would just be perfect. Yummmmmmmmmmmmmm

    hmm, so u son’t like mangoes but like chundo. i just saw tripti’s mango pickle and now urs.. which one should i make first? how come u don’t grate the mangoes in chundo?

    I am for anything made with raw maangoes!!!!! :D

    This is not exactly chunda dear. Chunda is made by suns heat. This is just a modified pickle kinda thing. Chunda has sugar but this is made with jaggery. This also you can make by grating the mangoes, I like mine with slightly bigger chunks and hence do it this way! :)

    Oh coffee, I wish you could ship those pickles to me :-( We dont get mangoes here either :-( we do find some mexican ones but they are not even worth buying after you have tasted Indian mangoes.
