Tropical Coconut Sorbet

Sorbet is a frozen dessert made from iced fruit puree and other ingredients. The term “sherbet” is derived from the Turkish word for “sorbet”, ÅŸerbat. Adopted from French tradition, sorbets are traditionally served between the starter course and entrée in order to cleanse the palate.

Sorbet is a form of gelato that contains no milk, unlike ice cream. Sorbets may contain alcohol, which lowers the freezing temperature, resulting in a softer texture. Whereas ice cream has air whipped into it, sorbet has almost none, which makes for a dense and extremely flavorful product. Sorbet is served as a non-fat and vegan alternative to ice cream.

Thats my entry for ‘T’ this week at Nupur’s !!!!

This recipe is from my newly acquired cookbook ‘Fat-Free Vegetarian’ by Anne Sheasby. A book with over 180 delicious easy-to-make low-fat and no-fat recipes for healthy meals!! :) I was just awed by the wonderful step by step pics and clear directions given by Anne!!!

For this you will need:

1 cup sugar
1 cup water
3/4 cup coconut milk
1/2 cup desiccated coconut
a squeeze of fresh lime juice

  • Place 1 cup sugar and 1 cup water in a pan. Bring it to boil stirring constantly until the sugar has dissolved completely. Reduce the heat and simmer for 5 mins to make a light syrup.
  • Stir in the coconut milk, desiccated coconut and lime juice.
  • Pour the mixture into a shallow bowl or container and freeze.
  • After 2-3 hours, remove from the freezer and process in a blender or food processor until smooth and creamy, then return it to the freezer and leave until frozen.

After removing it from the freezer for the first time, I could not resist the temptation and dug in with my spoon. ;) I found the sorbet to be a bit on the sweeter side for my taste. Hence while churning it in the food processor I added about 1/2 cup of milk to it. I leave it to you to decide how sweet you want it to be. :)

Thats it!!!!! Deliciously refreshing and cooling sorbet is ready! :)

What!!??? Now don’t look at me like that okay!!!! Sorbet is a fat-free dessert!!!!! Going Lite doesn’t mean you have to eat ghaas phoos everyday.

    Ghaas phoos - If this isn’t the Tangdi Kabab of all desserts with 1 cup of sugar - cheeni most certainly isn’t kam - yes, I just saw the movie this week and want to rave about it to anyone who will let me or can’t stop me … :lol:

    The cheeni is definately not kam here…… thats why I had to add a bit of milk to it…… 3/4 cup should be just nice! :)

    I love sorbet and coconut sorbet? why that’s simply divine. I am lactose intolerant so I use sorbet all the time instead of ice cream. :smile:

    Never heard of dessicated milk before :p in step 2. That book sounds great. Do post more recipes from the book. I might purchase one for myself then ;)

    Technically speaking yes!!!! But it has a very diff texture than that of ice-cream.
