Chunky Brownie!
Like she collects chocolate cake recipes… I collect brownie recipes! So far I have about 8 different recipes of making chocolate brownies…. all tried and tested. I big fan of Nigella that I am, I had to try hers as well.
You should see me when her show- Nigella Feast’s is aired on Discovery - Travel and Living. I am sitting on one of the seats closest to the television, eyes wide open
(I will only blink my eyes during the commercials  ) and ears bigger than an elephant !!
I love the way she shows the ingredients and recipes on the show. Of course thanks to the wonderful photography, but it’s such a treat to the eye! I dare not blink to miss the glaring melted chocolate, or the pouring of luscious strawberry pulp or the raining chocolate chips just flowing out through her fingers!
Its food porn for sure!
She (or her script writer) sure knows how to describe the ingredients in the best way…. her dictionary only contains adjectives! (stress first half of the words, as you read them) Luscious… gleaming… tender… mushy… gorgeous… nutty…. beautiful…. fresh….. crunchy….. her list is endless!
This brownie is by far the best I have eaten made and the most chewy, gooey in texture! Absolutely chunky and bursting with flavours!
The way any brownie is made is almost the same…… melt the chocolate and sugar, blend in the wet ingredients and then gently fold in the dry ingredients . They only differ in the ingredients and their proportions.
The only change I made in her recipe is to substitute walnuts for chocolate chips and I reduced the portions to make in smaller quantity.
You will need:
- 1 stick unsalted butter, softened (1/2 cup)
- 4 ounces semisweet chocolate, chopped
- 2 ounces unsweetened chocolate, chopped
- 1 1/4 cups sugar
- 1 tablespoon plus 1/2 teaspoon pure vanilla extract
- 3 large eggs,
- 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup chopped nuts
- 1/4 teaspoon salt
The method is like all others:
Melt the chocolate and butter
Mix the sugar and other wet ingredients
Fold in the dry ingredients
Pour into a greased tray
Pop into the oven pre-heated to 325 F for 50-55 min.
Let it cool for a while and then cut into pieces.

Enjoy with a cup of Coffee!
