Chili Garlic !

After this, chili garlic is another regular in my refrigerator.

Both being absolutely strong it their flavors, just a tiny portion of it added to any dish elevates it to another level ! When it comes to talking about these two strongly flavored spices, “size surely does not matterTongue out. A small slice of chili is enough to make you run like jungle on fire (for me atleast!!)…. and the wonderful aroma breezing out of you after a garlicky meal is enough to spoil your image in a second! WinkThese are two flavors, when less is always more… Any recipe, be it the flavorful Indian cuisine, the delicately flavored Italian cuisine or the spicy Chinese food pairs beautifully with this combo!

You will need:

 

  • 4-5 cloves of garlic
  • 3-4 red chilies
  • 1-2 tsp extra virgin olive oil
  • salt to taste

Coarsely crush it all together in a blender. Add few more drops of olive oil if required for your grinder. Since I use it for Italian and Chinese recipes as well, I prefer to keep it slightly coarse. You can grind it to a smooth paste as well. If you are making in larger quantities, store in a freezer. Smaller quantities will stay in the chiller for a week easily.DSC00710 A

    I keep the crushed garlic and chillies separate. You used fresh red chillies here?

    Yes, fresh red chilies. The same ones you see int he pic. :)

    Chili and garlic , what a neat idea, I use both in a lot of my dishes… it looks great… will make a fine dipping sauce too I’d think… :)

    thanks a ton…..i like this chili -garlic sauce in some fried rice preps we get here…they use sesame oil and this chili-garlic sauce which gives a distinct smell and flavour…..so i am bookmarking this :)
