Panino

Panino is a sandwich made from a small loaf of Ciabatta bread.

Ciabatta (chuh-bah-tah) bread - italian white bread with a crisp crust, a somewhat soft, porous texture, and is light to the touch.

When I am alone for lunch or dinner, I am rather lazy to cook anything! I stock up my kitchen with this bread for an instant meal with lots of variations as soon as I get back from work.

You will need:

  • Ciabatta bread
  • Your favorite spread - butter, cheese or extra virgin olive oil
  • Your favorite salad leaves - I used red coral lettuce
  • Assorted mix of veggies - I used sliced button mushrooms, baby corn and bell peppers.
  • 1/4 tsp Chili Garlic
  • Extra virgin olive oil
  • Salt to taste

Arrange it all together:

  1. Slice the veggies and mix extra virgin olive oil, chili garlic and salt to taste.
  2. Put it in the oven and grill it for 5-7 min
  3. Meanwhile, slice the bread into half horizontally, apply your favorite spread (I poured few drops of extra virgin olive oil) and lay the lettuce leaves on it.
  4. Once the veggies are lightly grilled, lay it on the lettuce leaves.
  5. Cover, warm (you may choose to toast it, but keep in mind that ciabatta is already a crispy bread) for about 30 sec in microwave and eat! Chow time!
  6. Sandwich is ready in 20 min! Banana

    The sandwich is totally worth that dance and lots more :) Its looking so good! i loce Ciabatta too, and this one is perfect for a quick, but sumptuous lunch/dinner!

    I love Paninis but they usually have quite a bit of cheese in them.

    Looks great.This is a “boy” Panino!!Great entry for quick fix lunch.
    We call them Panini (”girl”?!:D) sandwiches here and they are pressed and grilled both sides until they have crisp golden crust.

    (tummy rumbling) That looks sooo good, Coffee! Just brimming with colorful veggies, and the name “red coral lettuce” is so pretty and poetic! I do like toasting ciabatta…it gets such a crackly crust.

    Oh Coffee, this is a grand meal in few minutes. I would love to have this every day :) Grilled vegees with chilli garlic must be tasting awesome .Though we don’t get this bread here I will substitute with some thing else :)
