Puri Bhaji
When Anita announced the party, I thought that was the most innovative way of celebrating independence day (week). I was thrilled to make puris for the first time ON MY OWN!
But then, the hubby comes home and says that he will be traveling the whole week and won’t be back till the weekend. There…….. all my dreams of frying puri’s go with him on his trip!
If you have been a regular reader, you will know how much I dislike cooking which has anything to do with rolling any breads ……… and to top it up with frying, which I am not very comfortable with (I mean the whole act of frying and not fried foods)…… so, if I have to do all this just for me, FORGET IT! ![]()
All over the blogosphere I see everyone talking about their first adventures of making puri and I am only making imaginary puris. Just at the right cue, a friend calls up to ask if I was free to meet up since her hubby is also not around. ![]()
She: Hi, so you free to meet up today.
Me: :!: Sure, you come over for lunch, I’ll make puri bhaji.
(I am sure she would have noticed the desperation in my voice)
Pause for 5 sec……. she was probably thinking if she had heard me right!
She: Why puri bhaji? Anything simple would also do.
Me: No! I need to make it for Independence day party.
She: What??!!
ME: Nothing, you just come over. (I need someone to cook puri bhaji for!)
Puri
You will need:
- 1 cup wheat flour
- 2 tbsp rava/sooji
- 2-3 tbsp oil/ghee
- Salt
- water to knead the dough
Mix it all together and knead a tough-ish dough.
Let it rest for about half an hour or so. I remember my mum usually making small, thick ropes of the dough and frequently she would just keep kneading those ropes of dough while they are resting……
good for working up those arm muscles as well!
Make small portions and roll them into puri’s.
Meanwhile, the oil should be already heated for the puri’s to be slipped in.

This was my first experience of making it all by myself, but I have helped my mum make it for huge gatherings back at home. To make puri’s and not cluri’s, she would keep telling me to press and nudge the puri’s very gently with the back of the slotted spoon or any other spoon that you may be using. This apparently makes them balloon up……. I don’t know what’s the funda!!

I enjoyed making puri’s and will be making them again when the hubby is back! Thanks to you Anita, me and my friend had a lovely lunch, both sharing all our memories of puri bhaji as if it was something that was long forgotten. Something she said which really hit me was like, “Who calls anyone for puri bhaji for lunch these days, especially out of India!” And I felt that was so true…….. had it not been for the event, I would have never thought of making it. To top it all the weather gods showered like there was no tomorrow, bringing in the perfect mood for the afternoon.

Are you sure that is a poori and not a gol gappa?!
That was the whole point of the event - to celebrate good food with friends and family. Pooris are no more work (or unhealthy) than so much other stuff we cook…cakes and cookies, etc. etc….and it brought back so many childhood memories for a lot of us. We must make sure the next generation can have similar memories!

Like you said , kneading the dough really is hard work for the arm muscles.I know! I did it for the first time in my life yesterday & I had to go to sleep after applying a muscle-rub . I was in pretty bad shape & in a lot of pain :cry: .
But it was totally worth it. Now I have to find a way to exercise the muscles on my other arm!
You not only made me fry poori today also I have to post it now . You are too much and you know like you I too hate rolling
One more thing. Most of the Poori recipes I saw in the blogs didn’t add oil/shortening to the flour. I was thinking maybe only the Bengalis add it to make Luchi. But I see even you have added ghee/oil to the dough

Puri bhaji…yum. Just read your simple pasta with warm salad and I jsut wanted to pick it and eat. What a simple meal ! Great, love it !!
Lol can’t believe gal you fried puris for first time. Every other weekend my kids want puri and bhaji. ITs one of the favorites though i did not have time to blog this time :0. The gol gappa’s look perfect with the bhaji :mrgreen: i will try serving your way to my kids its a great idea

wow! that sure looks fantastically delicious. I know what you mean. If my better half is not there, I won’t even bother to cook because I don’t like to cook and eat alone except if I’m craving for something so badly.

Pooris look perfect! I do the same trick for my pooris to puff up. Even splashing the hot oil over the poori makes it puff up.
i loved the last picture…looks like kachori stuffed with bhaaji!
