A Spicy Breakfast!

I doubt if there is any kitchen which will never have any bread in it…… and I doubt there will be any kitchen which will not have 2 days old bread. You don’t have the heart to throw it and have to think of ways to use it up.

In my house, one way it to use it up is Spicy Masala French Toast and other is……

Masala Bread

Cut the bread slices into 1″ X 1″ pieces.

Heat 1-2 tsp oil, splutter mustard seeds and brown jeera/cumin seeds. Add 1-2 chopped green chilies.

Add 1 small chopped onion and let it soften. Season with salt and 1/4 tsp turmeric. (Be careful with the salt since bread already contains salt)

Now add the bread pieces, 1/2 tsp turmeric and 1/2 tsp garam masala. Toss it all together. Sprinkle water and keep tossing…. continue this till all the bread pieces have moistened. (MOIST and not WET!!)

Cover the vessel and let it cook, tossing intermittently. I normally make this in a non stick kadai, covered and on a very slow flame. This will bring on the crispy texture on the outside and soft bread on the inside.

Once all the bread pieces become crisp and brown, switch off the gas and add 1/2″ piece grated ginger, juice of 1/2 lemon, 1 tsp sugar (optional) and toss again.

Garnish with chopped coriander and enjoy it hot.

    Go ahead and make a mistake once, you will know how moist should moist be! ;)
    Just kidding….. all we want is that our bread pieces should not be dry. As soon as you cross that stage, that should be enough. :)

    Coffee you brought back sweet old memories of those hostel days…. bread upma (thats what we used to call it) was an all time favorite…. thanks for reminding…. i had left over bread and couldnt think of what to do with it :???: Now i know :wink:

    Frankly speaking, I am hearing this bread upma for the first time from all of you guys! We always call this masala bread at home! :)

    LOL! We used to do the same…… so from now, I count 2-3 slices per person and make in small proportion. No matter what quantity you make of this, its going to go down in no time! :)

    A favourite at my place too.. Stale bread either goes for breakfast in this fashion or to the ducks in nearby garden :grin:
    I make it the same way but mine never looks so lovely :???: Possibly coz I just put it in mixie or cut bread in a haphazard manner using hands in a hurry! :sad:

    Hey Coffee, this is one of my fav ways of eating bread…you hardly know its even there :twisted: I add the salt, chilli powder and garam masala to some diluted buttermilk and toss and soak the bread in it for 5-10 mins(until the onions and chillies are chopped) I tried it the way you have mentioned once and made a mushy mess out of it :cry:

    This recipe was just wonderful, Coffee! I just finished raving about it on my blog, after we tried it.

    Everybody loved it, including the six year old who is frequently such a picky eater that we wonder whether she will starve to death. When the food was done, she went to the stove to peek into the kadhai to see if there was anything left in there so that she could have a little more!

    This recipe is going among our favorites - the perfect way to use up that leftover bread, to have a very quick meal, and have it be absolutely scrumptious to boot.
