Tomato Bell Pepper Soup

Have been wanting to blog since a long time but things were just haywire on the other side.
Not going through the excuses since they can range from few to too many……. lets just say, life has taken over….. ![]()
Just briefly peeking through the blog world I actually skipped a season……. People were talking about spring then and now the snow has made its way on the blogs. This soup was just in time for the season and good enough to make me put whatever that was holding up my time aside and blog about it.
You will need:
4-5 large tomatoes
1/4 each of all the 3 bell peppers (or any one…. Less if you want it to be more tomato-ey)
1 medium sized onion
2-3 cloves of garlic
1 small red chilli (1/2 if you don’t want it burning down your throat)
Salt to taste
1 tsp sugar (optional)
black pepper to garnish
olive oil
How you go about it:
- In a large oven tray, cube the tomatoes, bell peppers, onion and slice the garlic.
- Add chopped chilli, salt to taste and about 2 tbsp olive oil. Mix it all together.
- Let it grill for about 12-15 mins (or till they all soften)
- Once grilled, let it cool a bit, run it through your blender, sieve and put it to boil.
- Add sugar if you don’t like the sour taste. (The sugar will not make it sweet but will help to cut down on the sourness)
- Garnish with fresh black pepper and sip it along with your favourite bread or just by itself.

Yummy.. soup sure going to keep the tummy warm.. with the upcoming snow storm, we would all need it.. love the pics.
Hmmm…more soup. Just perfect for the cold days we are having. Grilled vegetables must add depth to the soup…must try that.

Hey…how ve u been.? I made this soup two days back and we both liked it…:) keeper for wintry days…i used it without straining, liked the thickness….second time I added some dried basil too…..thanks for sharing
