Stuffed Dal Dhokli
Many of you would have certainly seen this old post of mine some many moons ago but I am posting it again since the pics were not visible. This time around I hope I don’t get the same problem and I am putting my new Panasonic FZ-18 to use here!
If you ever have gujju friends or relatives or eaten in a gujju household, this is one of their most sought after dishes for a one dish meal. Dhokli’s made from flour swimming in the dal flavoured by a variety of spices and condiments. As if that didn’t include a lot of work, this stuffed version doubles it up! I can’t help but to draw a similarity between this stuffed version of dal dhokli to gnochi in pasta sauce.
While you can certainly make this on your own (I do!) I would recommend having some help for the initial few times till you get a hang of it. Follow the steps in the order they are mentioned below and you are sorted!
The ingredients mentioned will make enough to serve 2-3 people.
There are three things which you will need to prepare before you start with it:
1. Pressure cook 1 cup of toor dal and run your hand blender through it.
2. Make soft dough like chapati by mixing:
- 1.5 cups of wheat flour,
- salt,
- 1 tsp red chili powder,
- 1/2 tsp turmeric,
- 1 tsp oil
3. Make stuffing by mixing together:
- 3 medium sized boiled and mashed potato
- 1/2-3/4 cup grated coconut (don’t miss out on this one!!)
- 1/2 cup chopped coriander
- 1/2-3/4 tsp ginger chili paste
- 1/2 tsp garam masala powder
- Salt to taste
Now you have to make small puri’s out of the dough, stuff the filling into it and make like a small dumpling.
There are two ways to do it:
1. Roll out small individual dhokli’s about 3-4 cm in diameter. Make small balls of the stuffing and wrap the dough around it.
2. Roll out a big chapati kind of a thing and make small impressions on it with a bottle lid acting like a cookie cutter and then stuff them all at one go. I have done the second method.
Roll out one big chapati kind of a thing covering almost the whole of your rolling surface. It should not be very thick otherwise the dhokli’s will remain uncooked. The thickness is about the size of a chapati.
With a Bottle lid about 3-4 cm in diameter, make impressions all around and remove the excess. Place (big) marble sized balls of the stuffing on them and wrap it around the stuffing. (see pic below)
Make all the dhokli’s in this way and keep aside. (Cover it with a damp cloth till you complete making all so that they don’t dry out)
Take a kadai and heat 2-3 tsp oil.
Pop 1/2 tsp of mustard seeds. Add 1/2 tsp of cumin and let it brown.
Add 1 cup of chopped tomato and let it cook for 3-4 mins lightly stirring in the middle till the tomatoes get soft.
Now add the blended toor dal to it.
Add all the spices to it:
1 tsp red chilli powder
3/4 tsp turmeric powder
salt to taste
1/2 tsp garam masala
2-3 tbsp crushed/chopped jaggery
3-4 kokum
handful of peanuts (optional)
Mix it all together and give it one boil.
Once the dal has started to boil add the stuffed dhokli’s in it slowly one by one. The simmering will slowly come down as you add the dhokli’s . Do not stir once the dhokli’s are inside, or else they might break! Half cover the kadai and let the dhokli’s get cooked.
After about 4-5 mins stir very gently with the spoon handle or a rolling pin. Once the dhokli’s start swimming on the surface means that its almost done. It will take about 10 mins for them to cook.
Garnish with chopped coriander and serve with some onion salad. (chopped onion+salt+chili powder)
To eat it a pure gujju way, add a dollop of ghee to it.

Dal dhokli makes me miss my gujju friends who moved from this place now. They used to make this for us on weekends and it was really yummy!!
